How to make orange dessert with almond crocanti, easy and without oven! Surprise with this exquisite orange semifreddo accompanied by an almond crocanti. You will enjoy a smooth texture, similar to that of a mousse.
Ingredients
- 4 eggs
- 120 grams of sugar
- 4 oranges
- 1 lemon
- 6 gelatine sheets
- 3 decilitres whipping cream
For the Crocanti
- 75 grams of sugar
- 75 grams of toasted almonds
- Lemon juice
1. Squeeze citrus fruits
First, be sure to wash the oranges and lemon thoroughly. Grate the zest until you have a tablespoon of zest of each type and squeeze the juicy citrus fruits. Also, carefully separate the egg whites from the eggs and beat the yolks with the sugar until smooth.
2. Melts with the softness of gelatine
Add the zest and juice to the mixture, then add the gelatine, which you have previously softened in water and drained to perfection.
3. Freeze the dough
Heat the mixture over low heat, stirring carefully until the gelatine is completely dissolved. Then allow to cool. Whip the cream and egg whites separately until stiff. Add both to the citrus cream and pour into a rectangular mould. Cover with cling film and put in the freezer for 6 hours. In the meantime, crush the almonds for the crocanti.
4. Create the perfect crocanti
In a saucepan, cook the sugar with the lemon juice for 3 minutes, until golden brown. Add the almonds, stir and cook for a further 2 minutes. Spread the mixture into a bowl lined with greaseproof paper and leave to solidify before chopping. Remove the semifreddo from the mould, decorate with the crocanti and serve elegantly.
