Necessary ingredients

  • 250 g white cheese spread
  • 1 egg
  • 2 egg whites
  • 1 pinch of salt
  • 1 plain yoghurt
  • Juice of 1 mandarin
  • Mandarin segments for decoration
  • 60 g sugar
  • 1 teaspoon vanilla essence
  • Zest of one lemon
  • Mint leaves for decoration

Step by step: preparation

  1. Prepare the base mixture: In a bowl, combine the white cheese, sugar, yoghurt, egg, lemon zest, mandarin juice and salt. Whisk together with a whisk until smooth.
  2. Integrate the egg whites: Add the egg whites one at a time, beating constantly to obtain a fluffy texture.
  3. Mould and bake: Pour the mixture into 4 flan moulds. Place in a preheated oven at 160 °C and bake for one hour. Turn off the oven and leave the cakes to cool with the door ajar.
  4. Decorate and serve: Peel the mandarins, remove the membrane from the segments and use these pieces to decorate the pastries along with some mint leaves. Serve and enjoy.

An extra tip: If you don't have individual moulds, you can use a large mould and cut into portions before serving.
